Hidden beneath the train arches, Mixology Heritage captures everything you expect from Tokyo’s speakeasy culture: dim lights, impeccable technique, and a philosophy focused on elevating classic cocktails to their highest form.

Their Apple Pie Negroni stood out, surprisingly smooth, soft in bitterness, and genuinely original without betraying the spirit of the Negroni. The bar also works with ancient bottles, giving certain drinks a depth you rarely find elsewhere.

I tried their Grasshopper, and it was simply excellent: rich, balanced, creamy but never heavy. A reinterpretation that shows how cacao can be used with finesse rather than excess.
